After harvesting, the grapes, including 5% of the super-ripe grapes, are separated from their stems. The juice and pulp then undergo cold maceration at controlled temperatures, followed by a gentle pressing which separates the grapes from the skins. Fermentation and ripening take place in 5 hl oak barrels. The resulting wine is left to repose for approximately three years with a further year in the bottle.
An intense straw-yellow colour with golden-green highlights. It is characterised by an elegant bouquet of ripe apple and flowers accompanied by a background of bread crust and sweet overtones. Mouthfilling, it is rounded and full-flavoured. The balance between tanginess and softness leads to a lingering finish which develops into warm overtones.
